    Curried Carrot & Coconut Soup ✨

    Per person
    350ml water & 3 carrots. Blend.
    Add a cm of fresh peeled ginger, 1 tsp of tamari and maple syrup, 1/2 tsp curry powder, handful of soaked cashew nuts, 1/2 avocado and a handful of raw dried coconut. Salt & Pepper to taste. Blend again.

    My lovely boss made a raw cake for me yesterday to mark one year in my job at a fabulous health shop. Nuts and seeds and cranberries frankly whatever in the press with coconut butter for base. Date paste middle and avocado and cacao cream on top. Meal in itself πŸ’«

    Chia, Nut & Cranberry Bars. These whizz up in minutes and you can freeze them too so make lots!
    3/4 cup of what soaked nuts you like.
    3/4 cup of soaked sunflower and pumpkin seeds (combined)
    3/4 cup oats
    2tbsp Chia Seeds
    1 cup of dates
    1/4 cup of dried cranberries or use raisins
    Pinch of...
    Chia, Nut & Cranberry Bars. These whizz up in minutes and you can freeze them too so make lots!
    3/4 cup of what soaked nuts you like.
    3/4 cup of soaked sunflower and pumpkin seeds (combined)
    3/4 cup oats
    2tbsp Chia Seeds
    1 cup of dates
    1/4 cup of dried cranberries or use raisins
    Pinch of cinnamon

    Put nuts and seed in processor and pulse into little pieces. Add dates and pulse again, you may need to add more dates enough so that the mix sticks when you pinch it. Tip into a bowl and add the oats, spice and dried fruit ( I put a little raw coconut in mine too). Press into a lined 8x8 inch tin and put in fridge over night. Cut into 6 bars, wrap individually and return to fridge. Or freeze 🌱 Yum!

    How I feel after a two week raw diet ✨
    • So true! I am a bit resistant when Ii know a raw feast is upcoming, but within a couple of days, I cannot deny the rush of energy I enjoy

    Quick marinade of equal parts olive oil and tamari. About 2tbsp of each is enough for 2 big portobello mushrooms.
    Wash them, and pull stalks out. Pour marinade on and leave for half an hour. Turn to make sure flavour gets right in ✨
    Serve with some speedy pesto, use whatever herb or nuts you...

    That’s it. Served on baby spinach with sweet tomatoes. Fab πŸ‘πŸ» few flax crackers too.
